Five Minute Caramel Sauce

That’s right: five minutes. (Honestly, you might be able to get that down to three, depending on how fast you can unwrap caramels and how powerful your microwave is.)

The caveat? You do need to start with high quality caramels. (Luckily, we know a gal.) (Or two.) And you can customize it however you want: with booze, spices, extracts…the sky’s the limit!

Then all you really need is some excellent ice cream, a little Coco Caramel Corn or busted-up Honeycomb Candy for topping purposes, and a spoon.

Makes approximately 1 cup

*Note: if you want to make it boozy, sub out 2 tablespoons of the cream for whiskey, rum, or your libation of choice.

6 ounces good-quality caramel candies, unwrapped (approx. 22-25 Liddabit Sea Salt Caramels)
1/2 cup heavy cream

1. Combine the caramels and cream in a microwave-safe container.

2. Microwave on High for 30 seconds, and stir. Repeat.

3. Reduce heating time to 15 seconds, keeping an eye on the mixture. When everything is smooth and incorporated, check the consistency.

If the mixture is too loose, add another caramel and stir to combine; if it’s too thick, add more cream one tablespoon at a time until desired consistency is reached.

You can also do this in a saucepan! Simply combine the caramels and cream (and booze, if using) in a small saucepan and cook over medium-low heat, stirring often, just until smooth, 10-15 minutes.
